OUR OIL

This was our first blend of oil made from Caninese, a native cultivar of the area with a strong character, mellowed by a touch of Frantoio. The orchard is in Musignano, an area which has an ideal terrain and environment for the production of the Caninese cultivar.

Why Principe (Prince)?  Because Caninese truly is the “Prince” of the various cultivars of our land.

Looking out over our olive orchards imagining what was and what will be over the centuries evokes a dream in us. We have therefore decided to produce an olive oil, monocultivar Caninese, exclusively from our secular olive trees, which remind us of the history of the men and women who have for centuries harvested and enjoyed the fruit from these very same olive trees.

In the midst of our land there is a precious freshwater spring which forms a stream that runs across our orchard and then flows into the Timone river.

The spring in this oasis of peace is surrounded by 26 olive trees which are naturally irrigated by these waters, at a constant temperature of 17 degrees Celsius.

It is from this idyllic terroir that our most delicate olive oil, La Fonte, originates.

CHILI PEPPER INFUSED OLIVE OIL

Il Vulcino’s aromatized chilli pepper olive oil has a lively red hue and a pronounced chilli pepper flavour, without being overly piquant. Its herbaceous aroma is enhanced by pungent and balsamic scents. Its full-bodied and vigorous flavour, density and piquant chilli pepper aftertaste make it perfect for a wide variety of foods. It will add colour and spiciness to pasta, give that extra zing to soups, pizza, vegetables, fish, meat and cheeses and even enhance ethnic dishes such as paella, tacos or cous cous.

LEMON INFUSED OLIVE OIL

This quintessential Mediterranean olive oil has a wonderfully fresh, zesty lemon flavour, without being astringent, which is complemented by herbaceous and sweet almond nuances. It is an extremely versatile dressing, perfect for boiled, fried or grilled meat, fish and vegetables, as well as raw dishes such as steak tartare, carpaccio, smoked salmon, salads. It can also accompany soft or aged cheeses.
Besides savoury dishes, it can also be used for sweets, for example on biscuits and tarts, pastry cream and pastries, fresh fruit salad and you can even enjoy a few drops on ice cream and sorbets.
